Four tortillas make two filled, double-layer pizzas with beef, beans and cheese. This is a home-style restaurant-inspired recipe, not an official formula.
Four tortillas form two double-layer pizzas. The filling is divided between two bases, not four.
Ingredients and measurements
- 1 lb ground beef
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- ½ tsp ground cumin
- Salt & pepper, to taste
- 4 large flour tortillas (10‑inch)
- 1 cup refried beans (canned)
- 1 cup shredded Mexican blend cheese
- ½ cup diced tomatoes
- ½ cup sliced black olives (optional)
- ¼ cup chopped green onions
- ½ cup shredded iceberg lettuce
- ¼ cup sour cream
- 2 tbsp tomato sauce
Preparation and cooking
- Stage 1
Cook ground beef in a skillet to 160°F, drain fat and stir in the measured seasonings. Warm beans separately.
- Stage 2
Warm four tortillas until pliable. On two bases divide beans, beef, tomato sauce, cheese, tomatoes and optional olives. Use only what fits in a manageable layer and serve excess separately.
- Stage 3
Cover each with a second tortilla. Toast over medium-low heat, turning with broad spatulas until both sides are golden and cheese melts.
- Stage 4
Top with lettuce, sour cream and scallions after cooking, then cut into wedges.
It stays crisp and avoids releasing water into the hot filling.
How many pizzas?
Refrigerate perishable leftovers promptly in shallow containers at 40°F or below, within two hours or one hour above 90°F. Reheat cooked leftovers to 165°F; keep cold dishes chilled.
