Small tortillas are coated with cinnamon cookie crumbs, shaped and baked before warm apple filling is added. Assemble close to serving.
Ingredients and measurements
- 6 small flour tortillas, about 4.5 inches in diameter
- 1/3 cup salted butter, melted; 1 teaspoon ground cinnamon
- 1 cup finely crushed vanilla wafer cookies
- 20 ounces canned apple pie filling, or equivalent prepared sautéed apples; 1/4 cup heavy cream
- Whipped cream, for topping
- Caramel sauce, for drizzling; Optional: pinch of ground nutmeg
Preparation and cooking
- Stage 1
Heat oven to 375°F. Brush tortillas with melted butter and press into the combined cookie crumbs and cinnamon.
- Stage 2
Shape over an inverted oven-safe muffin tin set on a rimmed tray. Bake about eight to ten minutes until crisp, then cool in shape. Do not let butter drip directly onto the oven floor.
- Stage 3
Warm apple filling with cream in a saucepan, stirring until hot and slightly thickened. Add optional nutmeg.
- Stage 4
Spoon a modest amount into each shell and add whipped cream and caramel at serving. Serve excess filling separately.
It catches butter and crumbs that would otherwise fall from the shaped shells.
Why use a tray?
Warm wet filling softens the shell quickly and can crack it when lifted.
Why avoid overfilling?
Refrigerate perishable leftovers promptly in shallow containers at 40°F or below, within two hours or one hour above 90°F. Reheat cooked leftovers to 165°F; keep cold dishes chilled.
