# Ingredients You’ll Need:

01 - 1 tablespoon vegetable oil
02 - 1 small onion, finely chopped
03 - 2 cloves garlic, minced
04 - 1 teaspoon ginger, grated
05 - 1 tablespoon curry powder
06 - 1 teaspoon turmeric
07 - ½ teaspoon chili flakes, optional
08 - 4 cups chicken or vegetable broth
09 - 1 cup coconut milk
10 - 1 tablespoon soy sauce
11 - 1 teaspoon fish sauce, optional
12 - 1 teaspoon sugar
13 - Salt and pepper to taste
14 - 12-15 store-bought or homemade dumplings (chicken, shrimp, or vegetarian)
15 - 1 cup baby spinach or bok choy
16 - ½ cup sliced mushrooms
17 - ½ cup shredded carrots
18 - Chopped cilantro or green onions for garnish

# How to Make It:

01 - Heat oil in a soup pot and soften onion. Stir in garlic and ginger briefly, then curry powder, turmeric and optional flakes without allowing them to burn.
02 - Add broth, coconut milk, soy sauce, optional fish sauce and sugar. Simmer gently for about ten minutes and taste before adding salt.
03 - If using mushrooms or carrots, add them early enough to become tender. Cut bok choy stems small and add before the tender leaves.
04 - Cook the dumplings according to their package or a reliable recipe for that specific filling. Simmer directly in the soup only when those directions allow boiling; otherwise cook separately and add when done. Check meat-filled dumplings meet the required safe temperature for their filling.
05 - Add spinach or tender bok choy leaves near the end. Divide cooked dumplings among bowls, ladle over broth and vegetables, and finish with cilantro or green onion.
