# Ingredients You’ll Need:

01 - 250g of chestnut mushrooms, washed and sliced
02 - 1 garlic clove, minced
03 - 1 tablespoon tamari
04 - 1 tablespoon extra virgin olive oil
05 - A sprinkle of fresh thyme leaves
06 - Black pepper (ground fresh), to taste
07 - 1 perfectly ripe avocado
08 - Juice from half of a lemon
09 - A small pinch of sea salt or pink Himalayan salt
10 - 2 pieces of sourdough or any preferred bread

# How to Make It:

01 - Heat oil in a wide skillet. Cook mushrooms until softened and their released liquid largely evaporates, stirring occasionally.
02 - Add garlic briefly, then tamari, thyme and pepper. Reduce any watery liquid before removing from heat.
03 - Mash avocado with lemon juice added to taste and a little salt. Toast bread until crisp.
04 - Divide avocado over the toast, top with mushrooms and serve immediately.

# Extra Suggestions:

01 - Mushrooms can need several minutes to release water. Late garlic is less likely to scorch while that happens.
02 - Start with less than the half-lemon amount and taste; avocado size and lemon yield vary.
