Parmesan Chicken with Roasted Potatoes and Green Beans (Print-Friendly Version)

This tray dinner gives potatoes a head start before adding Parmesan-coated chicken and green beans. Keep raw-chicken utensils separate from the vegetable preparation. Use enough tray space for a single layer, even if that means cooking across two pans.

# Ingredients You’ll Need:

→ For the Chicken

01 - 1.5 lb chicken breast (about 3-4 pieces, approximately 1 inch thick)
02 - 2 tablespoons olive oil
03 - 2 garlic cloves, minced
04 - 1/3 cup grated Parmesan cheese
05 - 1/3 cup breadcrumbs (Italian or plain)
06 - 1 teaspoon Italian seasoning (if using plain breadcrumbs)
07 - 1/2 teaspoon cracked black pepper
08 - 1/2-3/4 teaspoon sea salt

→ For the Potatoes

09 - 2 lb red potatoes, cut into bite-sized pieces
10 - 1-2 garlic cloves, minced
11 - 2 tablespoons olive oil
12 - 2 tablespoons grated Parmesan cheese
13 - Salt and pepper to taste

→ For the Green Beans

14 - 1 lb fresh green beans, ends trimmed
15 - 1 tablespoon olive oil
16 - 1 garlic clove, minced
17 - 1 tablespoon Parmesan cheese (optional)
18 - Salt and pepper to taste

# How to Make It:

01 - Heat the oven to 425°F and prepare one large rimmed tray or two trays.
02 - Toss the potatoes with their two tablespoons of oil, garlic, Parmesan, salt and pepper.
03 - Spread in one layer and roast for ten to fifteen minutes. In a clean bowl combine the chicken’s Parmesan, breadcrumbs, optional Italian seasoning, pepper and salt.
04 - Brush the chicken with its two tablespoons of oil and garlic, then coat with the crumb mixture.
05 - Toss the beans separately with their tablespoon of oil, garlic, optional Parmesan and seasonings. Add chicken and beans to the tray with space between components.
06 - Roast about twenty-five minutes, checking beans early and checking each chicken piece reaches 165°F.
07 - Remove finished components and continue roasting any firm potatoes until tender. Rest the chicken briefly and serve with the vegetables.

01 - Red potatoes need enough time to soften through their centers.
02 - One and a half pounds of chicken, two pounds of potatoes and a pound of beans can crowd a small tray.
03 - The chicken uses two tablespoons, the potatoes another two and the beans one.
