Chicken Avocado Melt Sandwiches (Print-Friendly Version)

Two substantial sandwiches combine sliced cooked chicken, avocado, tomato and melting cheese. Slice the chicken thinly and use only as much filling as the bread can hold securely. Each sandwich uses two of the four listed cheese slices.

01 - 2 boneless, skinless chicken breasts
02 - 1/8 teaspoon salt
03 - 1/8 teaspoon ground black pepper
04 - 1 tablespoon olive oil
05 - 1 avocado, sliced
06 - 4 slices Swiss, cheddar, or provolone cheese
07 - 4 slices sourdough or ciabatta bread

08 - 2 tablespoons mayonnaise
09 - 1 tablespoon Dijon mustard

10 - 1 small red onion, thinly sliced
11 - 1 medium tomato, sliced

12 - 2 tablespoons butter or olive oil

# How to Make It:

01 - Season the chicken with the measured salt and pepper.
02 - Heat the first tablespoon of olive oil in a skillet. Cook chicken on both sides until thick centers reach 165°F.
03 - Rest on a clean board and slice thinly. Slice avocado, tomato and onion.
04 - Spread mayonnaise and Dijon on the inside faces of four bread slices.
05 - On two bottom slices distribute chicken in a manageable layer. Add avocado, two cheese slices per sandwich, tomato and onion.
06 - Close with the remaining bread and reserve any excess chicken safely. Heat butter or the second oil portion in a skillet over moderate heat.
07 - Grill each sandwich on both sides until golden and the cheese melts, lowering heat if needed. Rest briefly, slice and serve.
