Bacon Cheddar Gnocchi Soup with a Gentle Cheese Finish (Print-Friendly Version)

This soup combines bacon, carrots, potato gnocchi and Cheddar in a creamy broth. The useful sequence is vegetables first, gnocchi next and cheese last. Cooking dumplings after melting all the cheese forces a cheese-rich soup through another simmer, making texture harder to control. Prepare each component so the final cheese stage can stay gentle and brief.

# Ingredients You’ll Need:

→ Main Ingredients

01 - 8–10 slices bacon, cooked and chopped
02 - 1 tbsp butter or olive oil
03 - 1 large onion, diced
04 - 2 large carrots, peeled and sliced
05 - 4 cups chicken broth
06 - 1–2 tsp salt
07 - 1 tsp black pepper
08 - 1 tsp garlic powder or 4 cloves minced garlic
09 - ¼ tsp dried thyme
10 - ½–1 tsp red chili flakes (optional)
11 - 16 oz gnocchi
12 - 2 cups heavy cream or half-and-half
13 - 2 cups shredded cheddar cheese (medium or sharp)

# How to Make It:

01 - Cook the bacon according to its package until done, drain and chop it. Reserve separately so it can be added at the finish.
02 - Warm butter or oil in a large pot and soften onion and carrots. If using fresh garlic, add it briefly near the end so it does not scorch.
03 - Add chicken broth, thyme, pepper and optional chili flakes. Simmer until the thickest carrot pieces are tender. Hold most added salt until the bacon and cheese are included.
04 - Add gnocchi to the simmering broth and cook according to its product directions, checking tenderness. Do this before adding the Cheddar.
05 - Lower the heat. Stir in cream or half-and-half, then gradually melt in finely grated cheese, stirring gently and avoiding a hard boil.
06 - Fold in bacon and taste before adjusting salt. Serve promptly; follow the storage guidance for any remaining soup.

# Extra Suggestions:

01 - The gnocchi and vegetables need their cooking stage first. Cheese can then melt without a prolonged vigorous simmer.
02 - No. Product size, storage type and manufacturer directions differ.
03 - The dumplings continue affecting the available liquid. Loosen individual portions gradually when reheating.
